You can join in the second chain if you are counting it as as a stitch.
The extended chain is where you chain 1 and pull it up long. I have found that starting this way blends the start of the round really well so you do not see a seam. There are several different ways to “Step Up” to the next round. One way might work better with one project while another way may work better with a different project.
I am new, I learned from your video’s a week or so ago, and then came across a babette, and I love them. So I want to learn the squares. What is a extended chain? If you do a chain 2.. when you go to join, you join in the 2nd chain instead of the 3rd.
If you are a new crocheter, it may just be your tension. As you practice, your stitches will become more even. There are a lot of people who hold their hook like a knife. I actually like to do a chain 2 or extended chain and then 3 full double crochet. The chain can actually make a project look awful and you will see a visible seam. I am wondering if the chain is what you are seeing.

I find that everytime I go into a new round and chain 3 it seems to look funny. I hold my hook like a knife, and wonder how much it is affecting my tension, I can’t seem to pick it up holding it the other way. I find that my first dbl into the dbl after the 3 chains is hard to find, not too sure what I am doing wrong. I have done about 40 squares now, and they all look the same. Grrr.

If you use a smaller stitch, the corner increases will be less or you will run in to fuller sides on the granny square. I hope that makes sense. Sometimes it is playing it by ear, since each person has a different crochet tension. There may be an amount of modification along the way.
